Tomato and Bocconcini Salad
Ingredients
- 250 mL (1/2 cup) olive oil
- 60 mL (1/4 cup) balsamic vinegar
- 30 mL (2 tbsp) maple syrup
- Fresh sweet basil leaves to taste
- Salt and pepper to taste
- 6 to 8 ripe fresh tomatoes
- 400g (3/4 lb + 2oz) bocconcini cheese
Directions
- Whisk together olive oil, balsamic vinegar and maple syrup
- Add a few chopped sweet basil leaves, season and set aside
- Layer on a plate alternating tomatoes and bocconcini slices
- Pour the vinaigrette over the tomatoes and cheese
- Decorate with fresh sweet basil and serve
