Maple Mustard and Cheddar Cheese Mushroom Cups

Ingredients

  • 1 garlic clove, chopped
  • 15 mL (1 tbsp) olive oil
  • 225 g (8 oz package) mushrooms (e.g., oyster, chanterelles, porcini or portobello)
  • 2 mL (½ tsp) fresh thyme
  • 60 g grated cheddar cheese
  • 10 mL (2 tsp) maple mustard
  • 12 mini pie shells (for mini quiches) 

Directions

  1. Sauté garlic in olive oil
  2. Add sliced mushrooms and thyme, and cook while stirring
  3. Remove from heat and set aside
  4. Spread maple mustard on bottom of pie shells
  5. Spoon approximately 1 tsp of mushrooms into each shell
  6. Top with cheddar cheese
  7. Cook in oven at 180°C (350°F) for 5 to 10 minutes
  8. Serve
